Arrange the bread slices in a baking dish.
In a saucepan, bring the milk to a gentle boil with the sugar, cinnamon stick, cardamom seeds, and lemon zest. Once it starts to boil, remove from heat and let it cool slightly for 5 minutes. Pour the milk mixture over the bread slices and let them soak for 10 minutes.
In a shallow bowl, combine the cinnamon and sugar, then set aside. Heat butter in a large frying pan. Beat the eggs in a separate shallow bowl.
Dip each soaked bread slice in the egg mixture, then place directly onto the frying pan. Repeat until the pan is full. Fry each side for 3-4 minutes, or until golden brown.
Once cooked, coat each slice in the cinnamon sugar mixture. Serve warm with a drizzle of honey.
